Garlic Shrimp Pasta


I posted a while back about a dinner i hosted at home and that i will need to adjust the recipe on a pasta i made. True to my word, here it is. LOL.

Here's what you'll need:

10 pieces shrimp, peeled and deveined
150 grams spaghetti, cooked
8 pitted black olives, sliced
2 sprigs of parsley, minced
4 cloves of garlic, minced
1/2 teaspoon chili flakes
Juice of half a lemon
salt & pepper
1 teaspoon of dried basil
5 tablespoons olive oil (or more)
1/4 cup grated parmesan cheese
Lemon wedge for garnish (optional)

In a bowl, combine shrimp, lemon juice, basil, salt and pepper (about half a teaspoon each). Toss together to coat shrimp. Heat 1 tablespoon of olive oil in a pan and saute the garlic until fragrant  then add chili flakes to it. Add shrimp to the garlic/chili mix and cook until pink.  Add the cooked pasta and the remaining olive oil. Mix thoroughly until pasta is well incorporated with  the other ingredients. Add the minced parsley, black olives and season with salt & pepper according to taste. You can add more olive oil as you go along if you think it's not enough. Transfer to a plate, sprinkle grated parmesan cheese and garnish with lemon wedge.
