Kung Pao Noodles


I love Yellow Cab's Charlie Chan Pasta. After trying P.F. Chang's Kung Pao Chicken, i was convinced - throw in some spaghetti and i've got myself a charlie chan pasta. So i searched for some recipes on kung pao chicken and tried my hand on it. Turned out good. :)

What you'll need:

1 chicken breast fillet, sliced into bite size
150 grams of spaghetti, cooked 
1/3 cup of shiitake mushrooms, soaked in hot water
1/4 cup cooked peanuts
4 spring onions
2 small chilies, chopped
3 tablespoons sesame oil

Marinade:
1 tablespoon soy sauce
1 tablespoon white wine
1 tablespoon vinegar
1 teaspoon sesame oil

Sauce:
5 tablespoons soy sauce
2 tablespoons vinegar
1 1/2 tablespoon sugar
1 tablespoon white wine
1 tablespoon sesame oil

Mix marinade ingredients in a bowl and add chicken bites. Stir until chicken pieces are well coated and let marinate for about 30 minutes. Mix sauce ingredients in a small bowl and set aside. Heat 1 tablespoon of sesame oil and stir-fry chilies. Add chicken bites to the pan including the marinade. Once cooked add the sauce mixture, peanuts, shiitake mushrooms and let simmer. Add the cooked pasta and remaining 2 tablespoons of sesame oil. Mix well until spaghetti is well coated with the sauce. Add spring onions toward the end. Serve hot.
