Classic Italian Carbonara



I love Italian food. I love how rustic it is and how something so good can be so simple to make. One of my favorites is the classic italian carbonara. One night i was watching No Reservations on TLC (mind you this was way back) and on that episode they were in a family-ran restaurant in Italy. They ordered the specials which included carbonara. That night i discovered that the pasta dish i've known to love is not how its really supposed to be cooked. And i thought to myself if i can't find a restaurant that serves authentic carbonara then the internet will provide the recipe. And so i searched and i found one that seemed easy enough to make. 

So here's what i made.


What you're gonna need.

4 strips of bacon (substitute for pancetta)
250 grams of spaghetti/fettuccine (whichever you prefer or what's readily available)
1 whole egg
2 egg yolks
1 1/2 tablespoon of grated parmesan cheese
salt
pepper

Slice bacon strips into small bites and throw in a well-heated pan. There will be no need for cooking oil as the bacon will cook in its own oil. Once crispy or cooked to your liking, set aside. Next, cook the pasta according to the directions on the packaging and set aside. To make the sauce, mix one whole egg, 2 egg yolks and grated parmesan cheese together. Transfer pasta in a saucepan and add the sauce mixture. Do not cook the dish in direct heat as you'll end up with scrambled eggs. The sauce will cook and thicken through the heat of the pasta. Season with salt and pepper according to taste.
